Valentines Sprinkle Stripe Cookies

Soft and sweet sugar cookies striped with red sanding sugar - perfect for Valentine's Day!

Ingredients

  • 1 cup unsalted butter left out at room temperature for 10 minutes
  • 1 cup granulated sugar
  • 2 whole eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 3 cups flour
  • 2 cups red sanding sugar (sugar sprinkles)

Instructions

  • In a bowl of a stand mixer fitted with a paddle attachment, cream together the butter, sugar, and salt until light and fluffy.
  • Add in the eggs and vanilla and mix until thoroughly combined.
  • Slow the mixer to low, then add in the flour until combined, but don't overmix.
  • Split the dough in half (half will be the sprinkles and half will be plain, so hang tight) then place one half of the cookie dough on one sheet of parchment paper and the other on another sheet. Place another parchment sheet on top of both of the dough balls. Use a rolling pin to flatten out the dough to be about 1/8 inch thick (both the separate doughs).
    For one half the dough, sprinkle on an even generous layer of red sanding sugar and use the rolling pin to roll the sprinkles into the dough.
  • Chill both of the dougsh for 20 minutes.
    Use a ruler for even measuring (about 1/4 inch), and a pizza slicer (or knife) to make long 1/4 inch slices in the cookie dough. Make sure to slice both the sprinkle dough and the plain dough.
    Carefully lift every other slice, and place in the opposite slice between each dough line - so you end up with every other line being a sprinkle line and a regular dough line right next to each other. If the dough is breaking, place it back in the freezer because it needs to be cold for this step!
    When you have a stripe pattern, use a rolling pin to gently roll the striped lined dough pieces together (so the stripes stick to each other again).
    Place the dough back into the freezer on a flat cookie sheet.
  • Use a small (2-3") cookie cutter to punch out hearts and place the hearts onto a cookie sheet lined with a sheet of parchment paper. Chill the dough in the freezer for 5 minutes.
  • Preheat the oven to 350 degrees, then bake the chilled cookies for 8-10 minutes. Cool the cookies on a wire rack and store in an airtight container.
