Cherry Chip Bundt Cake
2/3cupbuttermilkroom temperature
2/3cupsour cream room temperature
4eggwhites room temperature
1/3cupvegetable oil
1/3cupmaraschino cherry juice
1Tablespoonvanilla
1/4cupall purpose flour
1/2cupmini chocolate chips
115.25ozBox White Cake MixI used Duncan Hines, but anything similar should be fine.
Cherry Soak (optional, but adds more maraschino cherry flavor)
2/3cupmaraschino cherry juice (from the jar with the cherries in it) optional
Chocolate Ganache Drip
1cupchocolate melts I used Ghirardelli milk chocolate melts
1/4cupheavy cream
Garnish
1cupmini chocolate chips
1cupmaraschino cherries (with stems)
Instructions
Cherry Chip Bundt Cake
Preheat the oven to 325 degrees and prep a bundt cake pan with a swipe of shortening and a dusting of flour (or you can use baking spray, cake goop, etc). Set aside.
In a large bowl, hand whisk together all the ingredients except for the cake mix. When everything has been thoroughly combined, sift in the cake mix, and gently stir until it's just combined. Add cake batter to the prepared bundt pan, then bake for 25-27 minutes. Let the cake cool in the pan for less than 1 minute, then flip the bundt out onto a cooling rack to cool completely. *SOAK: if you'd like to add in the soak, place a cookie sheet under the cooling rack and pour the soak overtop the bundt cake.
For the Ganache
Add the chocolate and heavy cream together in a microwave safe bowl, then heat for 30 seconds and stir. Heat again and stir until it's smooth. Add to a drip bottle, or use a spoon to pour the ganache over the bundt cake. TIP: If it's too thin and runs to the bottom too fast, either let it cool for 10 minutes, or add in a few more chocolate pieces and stir to thicken the consistency. If it's too thick, add in a teaspoon of heavy cream and stir to thin it out a bit.
Garnishes
Add on the mini chocolate chips and top with the maraschino cherries. Enjoy!
