Instructions
How to make the chocolate doughnuts
Preheat the oven to 350 degrees (F), and prep doughnut pans with a swipe of shortening or cooking spray. Set aside.
In a small bowl, whisk together the flour, cocoa, baking soda, and salt. Set aside.
In another bowl, hand-whisk together the egg, melted butter, brown sugar, granulated sugar, vanilla, and buttermilk.
Slowly incorporate the dry ingredients into the second mixture and mix until just combined (don't overmix).
Add the doughnut batter to a large piping bag or ziploc bag and snip off the end. Carefully pipe the doughnut batter into the prepared doughnut pan (I usually do a little less than half full).
Bake for 8-10 minutes (mine were done at 8). Flip out of the pan and let cool completely before dunking into the ganache. Store in an airtight container when they're cool.
How to make the Chocolate Ganache
In a microwave-safe bowl, stir together the melts and heavy cream and heat for about 30 seconds. Stir, and repeat until the ganache is smooth and silky. Let it cool a little to thicken (and so the sprinkles will stick and not slide off!). If it's too thin, add a little more candy melts and stir. NOTE: If you want the ganache to "set" faster, you can completely skip the heavy cream and just melt the candy melts alone and dip them.
Assembly
Dunk the doughnuts into the ganache, let the ganache drip off carefully, and place (ganache side up) onto a parchment sheet. Immediately add the sprinkles and let sit to set.
