I totally get it.

I have the same exact problem.

We make cake after cake, and try as we may to eat it and share it all, we end up with, well, a little too many cake leftovers!

Although, is leftover cake to enjoy later really a problem?

Nah, but making sure we store it properly can be!

Today I’m sharing my tips and tricks for keeping your leftover cake just as mouthwatering, just as delicious, and just as fresh and moist as the day you made it. All it takes is a couple steps:

First, slice up your entire cake. Yep. Slice that ENTIRE gorgeous creation of yours in little serving size slices. I usually just get out a big cutting board and lay all the slices out so that I have less dishes, and can slice and prep my cake slices faster.

Second, wrap each individual cake slice in plastic wrap (I usually make sure it’s been wrapped up twice), then freeze them! They usually last up to a couple weeks and stay really fresh and moist. Freezer is best – fridge tends to dry them out and they loose their original texture/taste pretty fast. I tend to not have them go any longer than a couple weeks in the freezer because I love to share my cakes with friends, family, neighbors, and anyone else, really! It also makes a really yummy Netflix snack for after when the kiddos go to sleep. I’m sure they can be stored longer, but I haven’t personally tried it yet.

When you’re ready to have a slice, simply take the cake slice out of the freezer and let it thaw at room temperature for about 10-20 minutes (or you can microwave it if you’re impatient like my husband, 😉 ). The thicker the slice, the longer it will take to thaw. Remove the plastic wrap and dig right in!

That’s it! Sounds simple, but this easy trick has saved so much wasted cake by preserving them slice by slice in the freezer all wrapped up. They stack really well if you alternate the slice wedges on top of each other, and placed flat on a cookie sheet or pyrex dish (if you have a freezer that will accommodate that space). I sometimes write the flavor with a permanent marker on the plastic wrap covered cake, if I’ve made a few cakes that look similar on the inside.

Hope you’re all having a wonderful week, and as always, happy baking :).
